Ingredients

  • 8 ounces dry gluten-free pasta (try using a pasta made with beans or other gluten-free whole grain)
  • 1½ cups butternut squash, steamed
  • ½ cup whole milk
  • 3-4 ounces Velveeta or other melting cheese
  • Salt and pepper to taste

Directions

Start by cooking pasta and setting aside. While pasta cooks, puree butternut squash in a blender. Next, heat milk in small pot and add squash. Mix together and add cheese. Continue to cook over low heat and mix together well. Add salt and pepper to taste. Pour mixture over cooked pasta and gently combine. Serve warm.

I got this off a box of Velveeta Cheese when I saw it made on Good Morning America. The recipe is exact, i haven't changed it. I usually buy the large block of Velveeta cheese and store any unused cheese in ziploc bags, so I'm forever searching for the recipe. It's easy and fast. My family swears it tastes just like KFC! You can also put the Macaroni and Cheese in a greased casserole dish and make a topping out of 1 sleeve of crushed Ritz Crackers and 1 stick of melted butter. Combine and then sprinkle on top of casserole. Bake in 350 degree oven till top is golden brown.

6 round buttery crackers, crushed (about 1/4 cup)

Steps:

  • Heat oven to 350°F.
  • Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
  • Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.

1/2 cup all-purpose flour
4 cups milk
14 ounces Velveeta cheese, cut into chunks

Steps:

  • Preheat oven to 350 degrees.
  • Cook macaroni according to directions and drain.
  • Melt margarine in a large saucepan.
  • Add flour and whisk together.
  • Whisk in milk and cook over medium heat until mixture starts to bubble and thickens.
  • Stir constantly.
  • Add chunks of Velveeta and allow to melt.
  • Salt and pepper to taste.
  • Pour macaroni into a 13x9 oblong baking dish.
  • Pour sauce over macaroni.
  • Bake in the oven for 20 minutes, then put extra slices of cheese on top.
  • Bake for another 5 minutes until cheese melts.
  • Allow to cool for a few minutes, then serve.
